Pistachios
Iranian Pistachio Varieties: Akbari, Kalleh Ghouchi, Ahmad Aghaei & Fandoghi Compared
Long or round, buttery or toasty: how to tell Iran’s four great pistachio varieties apart, what “per ounce” sizing means, and which one to buy.
Key takeaways
- Iran’s export crop is dominated by four varieties: Akbari, Kalleh Ghouchi, Ahmad Aghaei and Fandoghi.
- Long varieties (Akbari, Ahmad Aghaei) taste sweeter and more delicate; round ones (Kalleh Ghouchi, Fandoghi) taste toastier.
- Iranian pistachios are sized by nuts per ounce — the lower the number, the larger the nut.
- Akbari is the premium gifting variety; Fandoghi is the everyday, best-value choice.
Ask for “Iranian pistachios” and you could receive any of a dozen very different nuts. Iran has grown pistachios for thousands of years, and its orchards — concentrated in Kerman Province around Rafsanjan, Anar and Sirjan — have produced distinct varieties with their own shapes, flavours and price points. For export, four of them matter most:Akbari, Kalleh Ghouchi, Ahmad Aghaei and Fandoghi.
The quickest way to tell them apart is shape. Long or round, slender or broad — once you know what to look for, you can identify each variety at a glance.
The four varieties at a glance
| Variety | Shape | Typical sizes (nuts/oz) | Flavour | Best for |
|---|---|---|---|---|
| Akbari | Super long, slender | 18–26 | Sweet, buttery | Gifting, premium retail |
| Kalleh Ghouchi | Jumbo, round | 20–26 | Toasty, rich | Snacking, ajil |
| Ahmad Aghaei | Long, almond-shaped | 22–28 | Clean, delicate | Retail packs, pastry |
| Fandoghi | Small, round | 26–34 | Classic, savoury | Everyday, processing |
Akbari — the long, premium pistachio
Akbari is the most prestigious Iranian pistachio and the one most often chosen for gift boxes and premium retail. The nuts are strikingly long — close to twice as long as they are wide — with a smooth, pale shell and a kernel that ranges from green to purple-blushed. The taste is sweet and buttery rather than sharply salty.
Akbari trees yield less than other varieties and the largest grades (18–20 and 20–22 nuts per ounce) are a small share of the crop, so Akbari commands the highest price. For importers, it is the variety that signals quality on the shelf.
Kalleh Ghouchi — the “ram’s head”
Kalleh Ghouchi means “ram’s head” in Persian, a reference to its broad, rounded shape. It is one of the most substantial pistachios in the hand, with a thick kernel, a firm crunch and a toasty, savoury flavour. Many Iranians consider it the classic pistachio for salted ajil and everyday snacking.
Because Kalleh Ghouchi reaches large sizes with a full kernel, it is popular with roasters and packers who want visual impact and flavour at a lower price than Akbari.
Ahmad Aghaei — elegant and pale
Ahmad Aghaei is a long, almond-shaped variety, slightly flatter and a little smaller than Akbari, with a bright shell and a light-green kernel. Its flavour is clean and delicate. It is widely planted across Kerman Province and has become a favourite for retail packs that want the look of a long pistachio at a more accessible price — and for confectionery once shelled.
Fandoghi (Owhadi) — the everyday workhorse
Fandoghi means “hazelnut-like”: the nuts are small and round. Also called Owhadi, it is one of Iran’s most widely grown pistachios, prized by farmers for reliable yields and by buyers for its classic flavour and excellent kernel ratio. It is the variety most Iranians eat day to day, and the best value per tonne for volume retail, food service and processing.
Other Iranian varieties worth knowing
- Badami (“almond-like”) — long varieties such as Badami-e Zarand, sometimes traded alongside Ahmad Aghaei.
- Khanjari and Shah Pasand — slender local types from Damghan, often harvested early for vivid green kernels.
- Green kernels — not a variety but a product: early-harvested nuts, shelled and peeled, used by pastry makers for their colour.
How Iranian pistachio sizing works
Iranian in-shell pistachios are graded by the number of nuts per ounce (28.35 g). A grade of 20–22 means 20 to 22 nuts weigh one ounce. The lower the number, the larger the nut:
| Grade (nuts/oz) | Size | Typical varieties |
|---|---|---|
| 18–20 | Super jumbo | Akbari |
| 20–22 | Jumbo | Akbari, Kalleh Ghouchi |
| 22–24 · 24–26 | Large | Kalleh Ghouchi, Ahmad Aghaei |
| 26–28 · 28–30 | Medium | Ahmad Aghaei, Fandoghi |
| 30–32 · 32–34 | Small | Fandoghi |
Tip for buyers: size is not quality. Always specify variety, size grade, split percentage, moisture and aflatoxin limits together in your contract.
Which variety should you buy?
- Premium retail and gifting: Akbari 18–20 or 20–22.
- Snacking and salted mixes: Kalleh Ghouchi 22–24.
- Retail packs with a long-nut look at better value: Ahmad Aghaei 24–26.
- Volume retail, food service and processing: Fandoghi 28–30.
- Pastry, ice cream and confectionery: green peeled kernels.
Not sure? Ask us for samples of two or three grades side by side — tasting them together is the fastest way to decide.
