Overview
Mazafati is a soft date, eaten fresh rather than dried — Iranians often simply call it the Bam date, after the ancient desert city where the best ones grow. The skin is thin and glossy, almost black, and the flesh is moist, melting and deeply sweet, with notes of toffee and cocoa.
Because of their moisture, Mazafati dates are packed in trays soon after harvest and are happiest in the fridge, where they keep for months. Enjoy them with black tea, stuffed with a walnut half, or with tahini and warm bread for breakfast.

Growing region
Soft, dark Mazafati dates
Beneath the ancient citadel of Arg-e Bam, palm groves irrigated by centuries-old qanats produce Mazafati — a soft, moist, almost chocolate-dark date that Iranians eat fresh rather than dried.

Both are soft. Mazafati is darker, smaller and moister, with a cocoa-like note; Medjool is larger, with a more caramel flavour.
Yes. Mazafati is a soft, high-moisture date, closer to fresh fruit than to a dried date. Keep it in the fridge, where it stays at its best for several months.
Natural fruit sugar crystallising on the surface. It is a sign of a well-dried fig, not mould, and it is perfectly safe to eat.
