Overview
Ahmad Aghaei is one of the most widely planted long varieties in Kerman Province. The nuts are almond-shaped and slightly flatter than Akbari, with a bright, smooth shell and a light-green kernel.
Its flavour is more delicate than Kalleh Ghouchi, with a clean sweetness that pastry cooks love. It is commonly enjoyed raw or salted and can be shelled for baking.

Growing region
Long-kernel Ahmad Aghaei & Badami pistachios
Kerman Province produces the majority of Iran’s pistachios. The countryside around Kerman city, Anar and Zarand is particularly associated with long, almond-shaped varieties such as Ahmad Aghaei and Badami, prized for their pale kernels and natural split.
Nutrition
Notable: One of the best nut sources of vitamin B6 and potassium; contains lutein and zeaxanthin, the pigments behind the green colour. Typical values for pistachio kernels per 100 g (USDA FoodData Central). Actual values vary by crop and roast.
Both are long varieties. Akbari is longer and plumper with a butterier taste; Ahmad Aghaei is a little smaller and flatter, with a lighter, cleaner flavour — and usually better value.
Yes. Shell the raw nuts and chop them for baklava, cookies or pistachio cream. For the most vivid green, choose our peeled green kernels.
They are different. California grows mostly one variety — named “Kerman” after its Iranian origin — while Iran grows several, from long Akbari to round Kalleh Ghouchi. Iranian pistachios are generally described as richer and more intensely flavoured; California pistachios are more uniform. Many chefs simply prefer Iranian nuts for flavour.
It is the number of in-shell nuts that weigh one ounce (28.35 g). A lower number means larger nuts. 20–22 is one of the largest commercial grades; 28–30 is a smaller, everyday grade.
