Sun-dried white figs from the famous rain-fed orchards of Estahban.

Overview
Estahban, in Fars Province, is home to vast rain-fed fig orchards — trees that rely on winter rain alone, without irrigation. The water stress makes the fruit small and intensely sweet, and after drying under the summer sun the figs are pressed flat into their characteristic button shape.
They are honey-sweet with a gentle crunch of seeds and a natural dusting of fruit sugar. Eat them with walnuts, slice them over breakfast, or simmer them into a compote.

Growing region
Rain-fed fig orchards
The hills around Estahban hold some of the largest rain-fed fig orchards in the world. Without irrigation the trees produce small, intensely sweet fruit that is sun-dried on the ground and pressed flat.

Yes. Mazafati is a soft, high-moisture date, closer to fresh fruit than to a dried date. Keep it in the fridge, where it stays at its best for several months.
