Overview

About Roasted Watermelon Seeds

Tokhmeh hendevaneh are perhaps the most loved of all Persian seeds. They are small and flat with a glossy, dark shell and a surprisingly rich kernel — and the more you crack, the faster you get.

Roasted in a fine brine and dried until crisp, they are the seed of choice for Yalda night and long conversations. Ask about the roasting date and packing of the actual product.

FAQ

Roasted Watermelon Seeds: questions

All seeds · tokhmeh
Are these the seeds from a regular watermelon?

They come from watermelon varieties grown especially for large seeds, which are then dried and roasted.

Are they hard to crack?

They take a little practice. Hold the seed upright between your front teeth and press on the edge until it splits.

Can you eat the shells?

Tokhmeh are made for cracking — the shells are tough and salty, so the custom is to eat the kernel and discard the shell.

Are these the same as pepitas?

No. Pepitas are hull-less green pumpkin kernels. Persian pumpkin seeds are roasted in their white shells and eaten by cracking them open.
