Overview
The plain west of Lake Urmia is one of Iran’s main sunflower regions, growing tall confectionery sunflowers with large, striped seeds. Roasted with salt, they are the lightest and most moreish of the Persian tokhmeh.
Large seeds are often selected for easy cracking and a substantial kernel. A great place to start if you are new to cracking tokhmeh.
