Overview
On Shab-e Yalda, the winter solstice, Iranian families stay up through the longest night of the year with pomegranates, watermelon, poetry by Hafez — and a generous bowl of ajil. A celebration mix may bring together Akbari super long pistachios, Mamra almonds, Extra Light walnut halves, roasted hazelnuts, golden raisins and white mulberries.
Celebration mixes are often shared as gifts. The tin shown is a presentation concept; ingredients, quantities and any available gift packaging need to be discussed before ordering.

Growing region
The pistachio capital of Iran
Rafsanjan sits on a high, dry plain at roughly 1,500 m, where hot days, cold nights and mineral-rich soil push pistachio trees to concentrate oil and flavour in the kernel. Orchards here grow the four varieties Iran is known for — Akbari, Kalleh Ghouchi, Ahmad Aghaei and Fandoghi — and the town is home to Iran’s national Pistachio Research Institute.
The night of Monday, 21 December 2026 — the eve of the winter solstice, 30 Azar 1405 in the Persian calendar.

Salted ajil (ajil-e shoor) usually contains roasted pistachios, almonds, hazelnuts, roasted chickpeas, pumpkin seeds and watermelon seeds. Sweet ajil (ajil-e shirin) contains dried white mulberries, raisins, dried figs, noghl (sugared almond slivers), raw almonds and pistachios.
Literally “problem-solving ajil”: a sweet mix traditionally made for Chaharshanbe Suri and shared with family and neighbours, in the belief that it helps wishes come true. It typically has seven ingredients.
