Overview

About Ajil-e Shirin (Sweet)

Ajil-e shirin is the sweet counterpart to salted ajil, and for many Iranians it is the taste of Nowruz. Ours combines sun-dried white mulberries, golden raisins from Malayer, dried figs from Estahban, noghl (sugar-coated almond slivers) from Urmia, and raw pistachios and almonds.

Nothing is roasted or salted: just sweet, chewy fruit and creamy raw nuts, with the occasional festive crunch of noghl. It is a lovely partner to black tea — and lighter than a plate of pastries on a celebration table.

FAQ

Ajil-e Shirin (Sweet): questions

All ajil mixes
What is noghl?

Slivers of almond slowly tumbled in sugar syrup until coated in a bumpy white shell — a speciality of Urmia, served at weddings and Nowruz.

Is it very sweet?

Pleasantly. Most of the sweetness comes from the fruit; noghl is only a small part of the mix.

What is in Persian ajil?

Salted ajil (ajil-e shoor) usually contains roasted pistachios, almonds, hazelnuts, roasted chickpeas, pumpkin seeds and watermelon seeds. Sweet ajil (ajil-e shirin) contains dried white mulberries, raisins, dried figs, noghl (sugared almond slivers), raw almonds and pistachios.

What is ajil-e moshkel-gosha?

Literally “problem-solving ajil”: a sweet mix traditionally made for Chaharshanbe Suri and shared with family and neighbours, in the belief that it helps wishes come true. It typically has seven ingredients.
