Overview
Gerdoo kaghazi are walnuts with a shell so thin you can crack two together in one hand. Buying walnuts in the shell is also the best way to guarantee freshness: the kernel stays sealed from air and light until the moment you open it.
Tuyserkan is known for paper-shell walnuts. Ask about the current origin, size and condition before ordering. Keep a bowl on the table through autumn and winter, the way Iranian families do.

Growing region
Iran’s walnut capital
Tucked against the Alvand range in the Zagros, Tuyserkan’s cool valleys and snow-melt streams grow walnuts with thin shells and pale, sweet kernels. The Persian walnut — Juglans regia — takes its English name from this part of the world.
Nutrition
Notable: The only common nut with a significant amount of plant omega-3 (ALA) — about 9 g per 100 g. Typical values for walnut kernels per 100 g (USDA FoodData Central). Actual values vary by crop and roast.
Up to 12 months in a cool, dry, dark place — the shell protects the kernel from air and light.
Hold two walnuts in your palm and squeeze them against each other. One will give way along its seam.
Juglans regia spread to Europe from ancient Persia via Greek and Roman trade, so English speakers have long called it the Persian walnut. The species is native to a broad belt from southeastern Europe through Iran to the Himalayas.
A walnut with a very thin shell (gerdoo kaghazi in Persian) that you can crack in your hand — usually by pressing two walnuts together. Paper-shell types are a speciality of Tuyserkan.
